IDENTIFICATION OF THE SAFETY OF ANIMAL-DERIVED FOOD PRODUCTS (CHICKEN CILOK MEATBALLS) AGAINST BORAX CHEMICAL HAZARDS IN PANJER VILLAGE, SOUTH DENPASAR

Borax is a chemical substance prohibited for use as a food additive due to its toxic properties and potential adverse effects on human health. Nevertheless, it is still illegally used in processed food products, including meatballs and pentol cilok, to improve texture, elasticity, and shelf life. This study aimed to identify the presence of borax in pentol cilok sold in Panjer Village, South Denpasar, as part of efforts to ensure the safety of food products of animal origin. A descriptive study with a qualitative approach was conducted. Samples were collected using a total sampling method involving 32 pentol cilok vendors. Borax detection was performed using the LabTest Borax Test Kit based on the colorimetric principle of curcumin-impregnated test paper. A positive result was indicated by a color change from yellow to red or dark red. The results showed that all 32 samples tested negative for borax, as indicated by the absence of a color change on the test paper. These findings indicate that the pentol cilok sold in Panjer Village, South Denpasar, were free from detectable borax contamination and therefore met food safety requirements regarding chemical hazards associated with borax. However, continuous monitoring and guidance for producers and vendors of processed foods of animal origin remain necessary to prevent the misuse of prohibited food additives and ensure food safety for consumers.
